Fresh and frozen ship provisions at Son Duong
SVC supplies fresh, chilled, frozen and dry ship provisions at Son Duong. Our practical experience with galley orders and onboard receiving helps chief cooks get the right food, useful pack sizes and a clear delivery record for the vessel’s next voyage.
01
Build the order around the galley’s next supply period
Our provision team separates meat, fish, produce, dairy and pantry goods into an order the chief cook can use. Separate meat, fish, vegetables, fruit, dairy, bakery and dry pantry lines. Identify whole products versus prepared portions, and state whether a quantity means kilograms, pieces or packs. SVC returns the offered product and pack against each requested line.
Keep essential first-meal supplies distinguishable from replenishment for later in the voyage. The cook can then approve priorities if the order is split. A ship with limited freezer space may need a different balance of frozen and dry food from a vessel receiving its main replenishment; use the ship’s instruction rather than a standard basket.
02
Confirm cuts and substitutes before purchasing
We work through cuts, preparation and acceptable substitutes before purchasing. Describe boneless or bone-in meat, whole or portioned fish and any preferred size range. Put dietary requirements on the relevant food lines. Requested certification needs confirmation for the offered product; a cuisine description alone does not establish it.
SVC identifies proposed alternatives before purchasing. Where the cook accepts a substitute, retain the accepted description with the original requisition line. Leave an unresolved item open instead of replacing it with an unapproved product or silently changing the supplied weight.
03
Prepare chilled and frozen goods for the actual receipt
Our team prepares chilled and frozen loads around the ship’s receiving and storage arrangements. Agree the handling arrangement for the journey and receipt, including any separate load of chilled or frozen items. A berth name alone does not establish a receiving crew, lifting appliance or available storage space.
SVC prepares the accepted packages and the delivery list so the crew can distinguish food groups and quantities. Keep technical stores and cleaning products identifiable separately from the food. If the vessel’s position or receipt time changes, revise the dispatch instruction before the affected goods leave shore.
04
Reconcile the delivered food with the accepted order
We reconcile the food handed over against the accepted order. Preserve the original unit: a carton count should not replace the weight or contents the cook approved. Note a damaged package or rejected line against its own item, then agree what remains to be supplied.
For a second load, issue a balance list rather than resending the whole original order. This makes the final galley receipt understandable even when food arrives in stages during an industrial-port call. Use the existing Son Duong chandlery guide for mixed deck and engine stores alongside the food order.

Questions about Fresh and frozen ship provisions at Son Duong
Can the order combine fresh food and dry pantry stores?
Yes. Send them in separate groups with clear units and pack contents. SVC quotes the proposed products, obtains acceptance of alternatives and identifies each group in the packing and receiving lists.
What if the Son Duong receiving window changes?
Send the revised position and time before dispatch. The handling and receipt plan for chilled or frozen goods must be reconfirmed for the changed journey and the vessel’s ability to receive the load.
08
